my cacao energy balls recipe

If you have ever been on an event of mine you will no doubt have sampled my cacao energy balls along with a cup of fresh herb or foraged tea. Gathering in circle for tea after Forest Bathing is a tradition and offers a chance to reflect on the experience. In the process of offering more attention to our senses, they become heightened so the aromas of the tea and flavours of the cacao treats are super gorgeous and delicious.

The hilarious part is…..I don’t really like cooking because I don’t enjoy the process (way too stressful for someone with time blindness and struggles with focus!) However, these seem to be an absolute winner and I always get asked for the recipe so I’m posting here for ease and to share the love!

This recipe is very loose and you can get super creative with your own.

Recipe

400g pitted dates chopped into small pieces

200g chopped hazelnuts or almond

2 tbsp Cacao

1 tbsp Plant based Milk

Optional additions:

Seed mix

Goji Berries

Chia Seeds

Flaked Coconut

Almond Butter

Honey

Flavouring - orange, peppermint oil etc

You can experiment with whatever you like really!

Method

First, add hazelnuts to processor and ground down so it is finely milled

Add the chopped dates and whizz them up so they also ground down and mix with nuts.

Add Cacao and whizz again

Add any additional items and whizz

When mixture is ready to be rolled into balls, add small amount of plant milk (not too much) so it binds and can be rolled.

Roll into small balls and place in the freezer to seal.

They can remain in the freezer until you are ready to consume and only take few mins to defrost.
